The funny thing about staging at a restaurant..
is that you aren’t doing anything super exciting. I spent a lot of yesterday stuffing peppers and portioning pork belly. Not exactly glamourous work, but it’s gotta happen to go forward, I guess.
For the record though, I’m pretty beast at stuffing peppers now.. for what that’s worth.
